Thai Glutinous White Rice (Khao Niew - ข้าวเหนียว)
Thai Glutinous White Rice (aka Glutinous Sweet Rice) is very sticky without being mushy - with a bit of natural sweetness. It is believed to be the main food for Thai’s and people in the region for thousands of years ago. This limited crop is grown in the northern part of Thailand, where the elevation is generally higher along with colder weather.
Thai Glutinous rice is high in Amylopectin but very little Amylose. Amylose level for Glutinous Rice is around 0% - 2% which makes it sticky and soft once it’s cooked properly.
Thais prefer using ‘Huad’ (a traditional bamboo steamer) to cook sticky rice because it almost always comes out with perfectly cooked glutinous rice. Rice cooker can be used – with careful measurement of rice and water.
