
Black Glutinous Rice (Khao Niew Dum ข้าวเหนียวดำ)
Similar to White Glutinous Rice, the Black Glutinous Rice is sticky and soft. It is generally milled to remove the husk but not polished to remove the bran, so the texture is rougher than milled & polished rice.
It contains anthocyanidins, the counterpart of anthocyanins, which are the sugar-free plant pigments unique to black rice. It is concentrated at the bran (inner shell), and it is water-soluble.
When you soak rice in water, the water turns gray/black due to its water-soluble characteristic. The absorbed anthocyanins (by the human body) show high inhibition to the mobility and invasion ability of some cancers in humans and maybe beneficial against cardiovascular diseases, type II diabetes, and obesity.
